In accordance with the present invention there is provided a method for processing seaweed, comprising the steps of: a) providing fresh seaweed; b) subjecting the seaweed to a first size reduction; c) contacting the seaweed with freshwater, thereby increasing the pressure inside the cells of the seaweed; and d) subjecting the seaweed to high shear conditions. By contacting the seaweed with freshwater, the cells take up water due to osmosis, increasing the pressure inside the cells.
